Proper Hotel's VIllon is now open, with a rooftop bar not far behind. James Beard nominated Chef Jason Franey talks with SF Chronicle about the offerings, which blend comfort and technique.

From the SF Chronicle article by Justin Phillips:

“We’re calling it ‘comfort geek’ which means it’s comfortable in the sense that everyone can come eat and it’s fun,” Franey says. “But it’s geeked out when it comes to technique so a everyone from a foodie to a chef can understand and appreciate it.”
